But the end of the canon means there will be less fanfic too, less fanfic options as everything is neatly sorted and set into place. That's exactly what I mean. *wails harder*

At least we'll get the big spike in fandom after the book, with everybody rejecting JKR's choices and rewriting things to suit their own preference... That should take us through a good six months, at least? And then comes the holiday-fic madness, and... I think fandom will make it :)
